Few foods are as synonymous with summer as peaches—the colorful, slightly fuzzy fruits with a sweet scent and sweeter taste. The Chinese domesticated peaches millennia ago, and the fruits made their appearance in the New World when the Spanish brought them to the coast of Georgia in the 16th century. Peaches are now a major commercial crop in several states. Try serving this refreshing peach salsa with grilled chicken or fish at your next cookout.

INGREDIENTS
2 cups ripe peaches, diced
¾ cup fresh lemon juice
½ cup red onion, diced
½ cup red bell pepper, diced
¼ cup canned chipotle chili peppers, seeded and minced
1 ½ teaspoons minced garlic
1 ½ teaspoons toasted and crushed cumin seeds
½ teaspoon minced fresh oregano
⅛ teaspoon salt
⅛ teaspoon freshly ground black pepper

DIRECTIONS
Mix ingredients together in a large bowl. Cover and refrigerate overnight before serving. Makes six servings.
