Peaches are now a major commercial crop in several states. Try serving this refreshing peach salsa with grilled chicken or fish at your next cookout.
INGREDIENTS
2 cups ripe peaches, diced
¾ cup fresh lemon juice
½ cup red onion, diced
½ cup red bell pepper, diced
¼ cup canned chipotle chili peppers, seeded and minced
1 ½ teaspoons minced garlic
1 ½ teaspoons toasted and crushed cumin seeds
½ teaspoon minced fresh oregano
⅛ teaspoon salt
⅛ teaspoon freshly ground black pepper
DIRECTIONS
Mix ingredients together in a large bowl. Cover and refrigerate overnight before serving. Makes six servings.
